Ingredients
  

Burger Patties:

  • 1 lb (450g) ground beef (80/20 lean-to-fat ratio)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (optional for extra spice)
  • Salt and black pepper, to taste

Guacamole:

  • 2 ripe avocados
  • 1 small tomato diced
  • ¼ cup red onion finely chopped
  • 1 tbsp fresh lime juice
  • 1 tbsp fresh cilantro chopped
  • 1 small jalapeño finely chopped (optional)
  • Salt and black pepper, to taste

Jalapeño Mayo:

  • ½ cup mayonnaise
  • 1 small jalapeño
  • 1 clove garlic minced
  • 1 tsp lime juice
  • ½ tsp smoked paprika

Additional Ingredients:

  • 4 fresh burger buns (toasted, if desired)
  • 4 slices pepper jack cheese
  • 8 big Lettuce leaves
  • 1 big Sliced tomato
  • 1 to 3 Pickled jalapeños (optional, for garnish)

Instructions
 

  • Step 1: Prepare the Burger Patties
    In a medium mixing bowl, combine the ground beef, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), salt, and black pepper.
    Divide the mixture into 4 equal portions and shape into patties slightly larger than the burger buns (as they shrink while cooking).
    Set aside and let the patties rest while you prepare the toppings.
  • Step 2: Make the Guacamole
    In a medium bowl, mash the avocados with a fork until smooth but slightly chunky.
    Stir in the diced tomato, red onion, lime juice, cilantro, and jalapeño (if using).
    Season with salt and black pepper to taste.
    Cover and set aside.

  • Step 3: Prepare the Jalapeño Mayo
    In a small bowl, mix mayonnaise, chopped jalapeño, minced garlic, lime juice, and smoked paprika until well combined.
    Taste and adjust seasoning if needed. Refrigerate until ready to use.
  • Step 4: Cook the Patties
    Preheat your grill or skillet over medium-high heat.
    Cook the patties for about 4-5 minutes per side for medium doneness (adjust timing based on your preference).
    During the last minute of cooking, place a slice of pepper jack cheese on each patty and cover the grill or skillet to melt the cheese.
  • Step 5: Assemble the Burgers
    Spread a generous layer of jalapeño mayo on the bottom half of each bun.
    Place a lettuce leaf and a slice of tomato on the bun.
    Add the cheesy burger patty, followed by a heaping spoonful of guacamole.
    Top with pickled jalapeños (if using) and the top half of the bun.
