Ingredients
  

  • 1 cup 1 cup almond flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup coconut flour
  • 1/4 cup almond butter
  • 1/4 cup honey or maple syrup Use your preferred natural sweetener
  • 1/4 cup almond milk Or any plant-based milk
  • 1/4 cup dark chocolate chips
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions
 

  • Mix the Dry Ingredients:
    In a large mixing bowl, combine the almond flour, vanilla protein powder, coconut flour, and a pinch of salt. Mix well to ensure there are no lumps, forming the base of your cookie dough.
  • Add the Wet Ingredients:
    In a separate medium bowl, mix together the almond butter, honey or maple syrup, almond milk, and vanilla extract. Stir until smooth and well combined.
  • Combine the Mixtures:
    Slowly add the wet ingredients to the dry ingredients, mixing continuously until the dough comes together with a thick, dough-like consistency. If the dough is too dry, add a bit more almond milk. If it’s too wet, add a bit more coconut flour.
  • Fold in the Chocolate Chips:
    Gently fold in the dark chocolate chips, making sure they are evenly distributed throughout the dough.
  • Chill and Enjoy:
    For the best texture, chill the cookie dough in the refrigerator for at least 30 minutes. This step is optional, but it helps the dough firm up, making it more enjoyable to eat. Once chilled, scoop out portions with a spoon and enjoy!
