  • Cookie scoop or tablespoon
  • Baking sheet
  • Parchment paper
  • Wire rack

Ingredients

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • cup + 2 tablespoons canola oil (or other neutral oil)
  • cup white sugar
  • ½ cup + 2 tablespoons brown sugar
  • ¼ cup milk (unsweetened almond or any milk)
  • ½ tsp vanilla extract

Mix-Ins

  • ½ cup white chocolate chips
  • ¼ cup macadamia nuts, chopped

Instructions

  • Step 1: Prepare the Dough
Mix the Dry Ingredients: In a large mixing bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
Combine the Wet Ingredients: In a medium bowl, whisk white sugar, brown sugar, and oil. Add milk and vanilla extract, stirring until smooth.
  • Step 2: Form the Dough
Gradually fold the dry ingredients into the wet mixture. Stir until combined, but avoid overmixing.
Gently fold in the white chocolate chips and macadamia nuts.
  • Step 3: Chill the Dough
Cover the dough with plastic wrap and refrigerate for at least 1 hour. This step helps the cookies maintain their shape during baking.
  • Step 4: Bake the Cookies
Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
Scoop the dough into 12 evenly sized balls and arrange them 2 inches apart on the baking sheet.
Bake for 10–12 minutes, or until the edges are golden and the centers are slightly underbaked.
  • Step 5: Cool and Serve
Let the cookies cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely. Enjoy!

Cooking Tips

  • Underdone is Key: For soft, chewy centers, pull the cookies out when they still look slightly underbaked.
  • Chill the Dough: Don’t skip this step! It ensures the cookies bake evenly and hold their shape.
  • Upgrade the Mix-Ins: Use high-quality chocolate chips and fresh nuts for the best flavor and texture.
