Ingredients
  

For the Cake

  • 2 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1/2 cup unsalted butter softened
  • 2 large eggs room temperature
  • 1/2 cup buttermilk (or substitute: 1/2 cup milk + 1 tsp vinegar, let sit for 5 minutes)
  • 3 medium bananas mashed (about 1 1/2 cups)1 tsp vanilla extract

For the Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar sifted
  • 1 tsp vanilla extract

Instructions
 

For the Cake:

  • Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper.

  • Mix Dry Ingredients:
    In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  • Cream Butter and Sugars:
    In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar using a mixer until light and fluffy (about 3-4 minutes).

  • Add Eggs and Vanilla:
    Beat in the eggs one at a time, then mix in the vanilla extract.

  • Alternate Wet and Dry Ingredients:
    Add the mashed bananas and mix until well combined.Gradually add the dry ingredients to the wet mixture in three additions, alternating with the buttermilk. Start and end with the dry ingredients. Mix until just combined; avoid overmixing.

  • Bake:
    Pour the batter into the prepared pan, smooth the top, and bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

    Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

For the Cream Cheese Frosting:

  • Cream Butter and Cream Cheese:
    In a large bowl, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Stir in the vanilla extract.
